Ottoman Cookery by Turabi Efendi was based on Melceü't Tabbahin (Aşçıların Sığınağı) Mehmet Kamil (1844)
Melceü't Tabbahin is the first printed Turkish cook book, which provides recipes for soups, meals and beverages in Turkish society, will be liked by the society that it was published eight times in the 44 years after its publication.
The book of 12 chapters with 288 recipes are soups 5, stews 31, salads 22, pans 11, pastries 21, dough desserts 44, milk desserts 15, puffed 26, olive oil and plain stuffed 14, pilaf 13, compote 14, pre-coffee desserts and drinks It consists of 26 recipes and 46 recipes consisting of salads and pickles written aside.[1]
Mehmet Kamil, who is one of the teachers of Mekteb-i Tıbbiye-i Adliye-i Şâhâne, reports that he has personally studied some of the manuscript books written in the 18th century in the preface of this work. Mehmet Kamil has made 12 + 1 chapters of food and similar types, which are considered as 7 chapters in the writing cookbooks he saw, and made them more orderly. In addition to this, it is seen that some dishes from the West are included, and even a recipe with tomato rice, tomato fry stew and potatoes is made. These recipes, which were probably very new to the society at the time, also enabled this cookbook to be printed eight times in a short time. Another reason is that 12 chapters in a certain category and additionally the salad, tarator and pickle varieties located on the edges of the work provided as well as convenience for the ladies and perhaps the cooks in the palace.
Melceü't Tabbâhîn (Asçilarin Siginagi), was re-published for the first time by Çiya Publishing in Turkish. Melceü Tabbâhîn, written by Mehmet Kamil, was first published five years after Tanzimat Fermani in 1844. The work that Gülsah Taskin transfers to today's Turkish is coming across to the readers with the adaptation of the old measures to the present. It is possible to follow the traces of a rich food culture in Melceü't Tabbâhî, which consists of twelve episodes including 284 food and drink recipes, from soup varieties to kebabs and cutlets, stews to stews, bruple varieties, vegetable dishes and salads. Some dishes in the book were made according to the one-to-one recipe and their photos were taken and presented to the readers. While reading Melceüt Tabbâhîn, you will witness our food culture that has changed since the past or preserved its characteristics. The book also includes the original texts. Faslı evvel- Çorbalar: “Çorbanın envaını ve tarik-i terbiye
ve tabhlarını beyan eder.”
Bu kısım içinde 5 çeşit çorba tarifi bulunmaktadır. Bunlar;
Nohut çorbası, Balık çorbası, Tarhana çorbası, Terbiyeli ciğer çorbası, Ekşili
çorba tarifleridir.
İkinci Fasıl- Kebaplar: “Kebapların envaını ve koyun ve kuzu
ve balık etlerinden yapılmış olan külbastılar envaın beyan eder” Bu bölümde 22
çeşit kebap tarifi bulunmaktadır. Bunlara örnek olarak Kuş kebabı, Muhzır
kebabı, Tavşan kebabı, İçi doldurulmuş, Kuzu kebabı, Lüfer külbastı gibi
tarifler sayılabilir.
Üçüncü Fasıl-Yahniler: “Lühumattan yahniler ve püryan ve
köfteler envaın beyan
eder” başlığı ile başlayan bölümde 31 tarif bulunmaktadır.
Beyaz yahni, Yaka yahnisi,
Uskumru balığından papas yahnisi, Maydonozlu sıkma köfte,
Kadınbudu ve Patlıcan mücmeri gibi çeşitli tarifler dikkat çekmektedir.
Dördüncü Fasıl- Tavalar: “Tava tabir olunur tavada tabh
olunan taamlar ve pilakiler
beyanındadır”. Bu fasılda 11 çeşit tava tarifi yer alır. Et
tavası, Hamsi balığı tavası,
İstiridye pilakisi gibi tarifler anlatılmıştır.
Beşinci Fasıl- Börekler: “Hamurdan mamul börek nev’inden
olan eti’me beyanındadır”
Bu kısımda 21 çeşit börek tarifi bulur bunlardan bazıları;
Sakız böreği, Türk böreği,
Paça böreği, Fincan Böreği, Tatar Böreği, Yumurtalı lokum ve
Vertika’ dır.
Altıncı Fasıl- Hamur işi tatlılar: “Hamurdan mamul sıcak
tatlı nev’inden olan eti’me
beyanındadır” Bu fasılda 44 çeşit hamur işi tatlı tarifi yer
alır. Bunlara örnek olarak
Musanna kaymak baklavası, Kadın göbeği, Kadife, Yağsız
kadayıf, Fodula kadayıfı,
Sabuniye helvası, Lamunya helvası, Güllabiye, Vişne ekmeği,
Cızlama tarifleri sayılabilir.
Yedinci Fasıl-Sütlü tatlılar: “Soğuk tatlılar envaını beyan
eder” Bu bölümde 15 çeşit
sütlü tatlı tarifi bulunmaktadır. Tavukgöğsü, Elmasiye,
Süzme saray aşuresi, Muhallebi, Şeftali tatlısı, Ayva Tatlısı, Sütlü aş,
Paluzec, Güllaç paludesi gibi farklı tarifler
bulunmaktadır.
Sekizinci Fasıl- Bastılar: “Bastı tabir olunur sebze taamlar
ve bazı perakende et’ime
envaını beyan eder” Bu kısımda 26 çeşit bastı tarifi bulur
bunlardan bazıları; Kabak
bastı, Medkune, Herise, Çılbur, Yalancı keşkek, Patlıcan
kayganası, Türlü, Güveç
balığı, İmam bayıldı, Sebzevat, Kavurmalı patlıcandır.
Dokuzuncu Fasıl- Zeytinyağlı ve sağyağlı dolmalar: “Zeytinyağlı
ve sağ yağlı
dolmalar envaını beyan eder”. Bu kısımda 14 çeşit tarif
bulunmaktadır. Mülebbes dolma, Halep dolması, Vişne yalancı dolması, Şalgam
dolması, Midye dolması, Mumbar
ve şirden tarifleri dikkat çekici örneklerdir.
Onuncu Fasıl- Pilavlar: “Pilavların envaını ve trik-i
tabhların beyan eder”. Bu kısımda 13 çeşit pilav tarifi bulunmaktadır. Bu
kısıma örnek olarak, Acem pilavı, Lüfer
pilavı, Tarak pilavı, Özbek pilavı, Yağsız pilav, Domates
pilavı sayılabilir.
On birinci Fasıl- Hoşaflar: “Hoşafların envaını beyan eder”
Bu fasılda 14 çeşit hoşaf tarifi bulunmaktadır. Misket elması ve akça armudu
hoşafı, Ali fakih eriği hoşafı, Bardaşa eriği hoşafı, Nar hoşafı, Şam fıstığı
hoşafı bu kısımda dikkat çeken tariflerdir.
On ikinci Fasıl- Kahveden önce yenecek tatlılar ve
içecekler: “Kahveden önce tenavül olunacak hulviyyat ve meşhur olan şuruplar ve
bunlara müteallik bazı nesneleri beyan
eder” Bu fasıl 20 farklı tarifi içermektedir. Ayva
murabba’ı, Gülbeşeker şemsiyesi,
Rahatü’l hulkum, Badem kurabiyesi, Menekşe şurubu, Kaba
koruk tatlısı, Sirkencebin bu kısımda öne çıkan tariflerdendir.
Bu fasılların en sonunda Der-Kenar başlığı altında Mehmet
Kamil’in sahife kenarlarına eklemiş olduğu 46 çeşit salata, tarator ve turşu
tariflerini içeren bir bölüm daha
bulunmaktadır. Bu bölümde yer alan tariflere örnek olarak;
Çerkez salatası, Istakoz
taratoru, Teke salatası, Urus turşusu, Balık turşusu,
Karadut peltesi, Bamya salamurası, Tertib-i hardal ve Badem hariresi
sayılabilir.
