Book | Jewish Cuisine of Edirne by Aydemir Ay and Dr. Yilmaz Seçim

[1]Aydemir Ay
He is from Edirne. He graduated from Edirne İlhami Ertem Highschool. He studied Tourism and Hotel Management at Eastern Mediterranean University from 1997 to 2001. After graduation, he started work as a part-time instructor at Trakya University. In 2002, he worked as an advisor to the governor of Edirne and as a full-time instructor at Trakya University. He completed his MBA at Beykent University in 2014.

In 2015, he started working as Edirne Municipality Tourism Consultant and continues to this day. He is the author of the book “Kırkpınar Oil Wrestling” that is currently sold at Amazon Books. He has been the consultant for many different hotels, tourism agencies and food and beverage establishments.

He writes promotional and tourism books in English, does academic research and writes articles about Edirne. His special interests are tourism, tourists and local public perception, cross-border tourism, history
of Edirne, gastronomy of Edirne, minority cultures, history of Kırkpınar Oil Wrestling, decreasing poverty, education for and economic strengthening of low-income groups.

[2] Yılmaz Seçim
He was born in the Ereğli district of Konya. He completed his high school education in Konya Gazi Mustafa Kemal Anatolian Hotel and Tourism Vocational High School. He studied Family Economy and Nutrition Teaching at Selçuk University from 2003 to 2007. After graduation, he started teaching at a public school in Sivas. In 2009, he worked as the Food and Beverage Services vocational course teacher at Konya IMKB Gazi Mustafa Kemal Anatolian Hotel Management and Tourism Vocational High School. 

He completed his Master’s Degree in Food Hygiene and Technology at Selçuk University in 2011 and his PhD in 2017. In 2015, he started working as a research assistant at the Department of Gastronomy and Culinary Arts of Necmettin Erbakan University. In 2018, he was promoted to the Postdoctoral Lecturer position in the same department and continues in this post to date. He has worked in many different
food and beverage establishments and in the kitchen departments of the hotels. He is still the chairman of the board of KOGAT (Konya Gastronomy and Chefs Association). He is a board member of TAFED (Turkey Chefs Federation). He is actively involved in non-governmental organizations working in the field of cooking and tourism.
